Chocolate Walnut Zucchini Cake

Using a vegetable in chocolate cake recipe might seem a bit strange but this recipe incorporates grated zucchini to keep the chocolate cake soft with walnuts to add texture. This recipe is made for chocolate lovers with chocolate chips in the chocolate cake.

Equipment

  • 2-inch Baking Pan (13" x 9")
  • Medium Mixing Bowl
  • Large Mixing Bowl
  • Electric Egg Beater or Mixer

Ingredients
  

  • 3/4 cup Walnuts (chopped)
  • 2 1/4 cup All-Purpose Flour (sifted)
  • 1 package Semisweet Chocolate Chips (6-ounce package or 1 cup)
  • 1/2 cup Cocoa Powdered (unsweetened)
  • 3 Unpeeled Zucchinis (grated, 2 cups)
  • 1 tsp Baking Soda
  • 1/2 cup Buttermilk
  • 1 tsp Salt
  • 1 tsp Vanilla Extract
  • 1 3/4 cups Sugar
  • 2 large Eggs
  • 1 stick Unsalted Butter (1/2 cup, room temperature)
  • 1/2 cup Vegetable Oil

Instructions
 

  • Preheat oven to 325°F and take the butter out of the fridge to soften at room temperature.
  • Prepare baking pan by coating with butter and flour.
  • In a medium mixing bowl, sift the cocoa powder, flour, baking soda, and salt.
  • In a large mixing bowl, beat butter, sugar, and oil until blended well.
  • Continue mixing with the electric beater while gradually adding one egg at a time until well blended.
  • Add vanilla and continue mixing with an electric beater.
  • Mix in dry ingredients with buttermilk gradually mixing evenly.
  • Add grated zucchini and ensure the mixture is blended evenly.
  • Pour batter into the baking pan evenly, then sprinkle nuts and chocolate chips.
  • Bake for 50 minutes and let the cake cool in the pan.
  • Serve and enjoy!
