Nutrient-Rich Creamy Carrot Soup
This delicious creamy soup recipe incorporates the nutrient-rich root vegetable with carrots including vitamin A, vitamin K, potassium, vitamin C, calcium, and iron. This soup recipe contains carrots with some savory seasoning for a hearty soup.

Ingredients
- 4 cups Chicken Stock or Broth recommended - reduced stock
- 2 lbs Carrots or 8 large carrots (peeled and sliced into 1/2" rings)
- 2 tbsp Parsley (optional garnish)
- 6 oz Bacon or 6 strips (chopped)
- 1/2 cup Heavy Whipping Cream (additional amount recommended for garnish)
- 1 large Yellow Onion or 2 cups (diced)
- 1/2 cup Milk
- 1 Celery Rib (diced)
- 2 cloves Garlic (minced)
- 1/8 tsp Black Pepper
- 2 tsp Salt (or more for taste)
Instructions
- Brown the chopped bacon in a large pot, then remove bacon with a slotted spoon and set aside.
- In the same large pot add sliced carrots, diced onions, and celery. Cook for 6-8 minutes until onions soften (not brown).
- Add minced garlic, salt, and pepper stirring mixture for one minute.
- Add four cups of chicken stock and bring to a simmer then partially cover.
- Cook mixture for 20-25 minutes or until carrots soften.
- Puree soup using an immersion blender or traditional blender in batches.
- After forming a smooth texture, return soup to pot stirring in 1/2 cup milk and 1/2 cup heavy cream.
- Season with salt and pepper to taste.
- Garnish with optional parsley or heavy whipping cream.
- Let cool then serve and enjoy with optional parsley or heavy whipping cream garnishes.
