Nutrient-Rich Creamy Carrot Soup

This delicious creamy soup recipe incorporates the nutrient-rich root vegetable with carrots including vitamin A, vitamin K, potassium, vitamin C, calcium, and iron. This soup recipe contains carrots with some savory seasoning for a hearty soup.

Ingredients
  

  • 4 cups Chicken Stock or Broth recommended - reduced stock
  • 2 lbs Carrots or 8 large carrots (peeled and sliced into 1/2" rings)
  • 2 tbsp Parsley (optional garnish)
  • 6 oz Bacon or 6 strips (chopped)
  • 1/2 cup Heavy Whipping Cream (additional amount recommended for garnish)
  • 1 large Yellow Onion or 2 cups (diced)
  • 1/2 cup Milk
  • 1 Celery Rib (diced)
  • 2 cloves Garlic (minced)
  • 1/8 tsp Black Pepper
  • 2 tsp Salt (or more for taste)

Instructions
 

  • Brown the chopped bacon in a large pot, then remove bacon with a slotted spoon and set aside.
  • In the same large pot add sliced carrots, diced onions, and celery. Cook for 6-8 minutes until onions soften (not brown).
  • Add minced garlic, salt, and pepper stirring mixture for one minute.
  • Add four cups of chicken stock and bring to a simmer then partially cover.
  • Cook mixture for 20-25 minutes or until carrots soften.
  • Puree soup using an immersion blender or traditional blender in batches.
  • After forming a smooth texture, return soup to pot stirring in 1/2 cup milk and 1/2 cup heavy cream.
  • Season with salt and pepper to taste.
  • Garnish with optional parsley or heavy whipping cream.
  • Let cool then serve and enjoy with optional parsley or heavy whipping cream garnishes.

Notes

This creamy soup will require blending with a variety of cooking tools that can be used depending on what you have in your kitchen. You can blend this creamy soup with a high-powered blender, immersion blender, electric hand mixer, or food processor.
