Nutrient-Rich Creamy Carrot Soup

This delicious creamy soup recipe incorporates the nutrient-rich root vegetable with carrots including vitamin A, vitamin K, potassium, vitamin C, calcium, and iron. This soup recipe contains carrots with some savory seasoning for a hearty soup.

Ingredients
  

  • 4 cups Chicken Stock or Broth recommended - reduced stock
  • 2 lbs Carrots or 8 large carrots (peeled and sliced into 1/2" rings)
  • 2 tbsp Parsley (optional garnish)
  • 6 oz Bacon or 6 strips (chopped)
  • 1/2 cup Heavy Whipping Cream (additional amount recommended for garnish)
  • 1 large Yellow Onion or 2 cups (diced)
  • 1/2 cup Milk
  • 1 Celery Rib (diced)
  • 2 cloves Garlic (minced)
  • 1/8 tsp Black Pepper
  • 2 tsp Salt (or more for taste)

Equipment

  • Large Pot
  • Immersion Blender or Traditional Blender

Method
 

  1. Brown the chopped bacon in a large pot, then remove bacon with a slotted spoon and set aside.
  2. In the same large pot add sliced carrots, diced onions, and celery. Cook for 6-8 minutes until onions soften (not brown).
  3. Add minced garlic, salt, and pepper stirring mixture for one minute.
  4. Add four cups of chicken stock and bring to a simmer then partially cover.
  5. Cook mixture for 20-25 minutes or until carrots soften.
  6. Puree soup using an immersion blender or traditional blender in batches.
  7. After forming a smooth texture, return soup to pot stirring in 1/2 cup milk and 1/2 cup heavy cream.
  8. Season with salt and pepper to taste.
  9. Garnish with optional parsley or heavy whipping cream.
  10. Let cool then serve and enjoy with optional parsley or heavy whipping cream garnishes.

Notes

This creamy soup will require blending with a variety of cooking tools that can be used depending on what you have in your kitchen. You can blend this creamy soup with a high-powered blender, immersion blender, electric hand mixer, or food processor.
